Dipping Sauce Recipes from an Educational and Fun Experience in Hoi An!

Fish Dipping Sauce

• 3 tbsp fish sauce (nước mắm) (40o protein content, anchovy and salt)
• 1 tbsp finely chopped garlic (tỏi)
• 1 tbsp lemon/lime (chanh)
• 2 tbsp sugar (đường)
• 1 Thai chilli (ớt hiểm)
• 3 tbsp water

Directions: Combine ingredients.


Peanut Butter Sauce

• 1 tbsp cooking oil
• 2 tbsp fish sauce/soy sauce/hoisin sauce (nước mắm/nước tương/ tương đen)
• 2 tbsp peanuts butter (bơ đậu phộng)
• 1 tsp lime/lemon juice
• 1 tbsp sugar (optional)
• 1 tbsp garlic/lemon grass/shallot; Thai chilli
• 3 tbsp water or broth (from pork/prawn)

Directions: Heat cooking oil in a pan, add garlic, shallots until golden and fragrant. Add 2 tbsp peanut butter, 2 tbsp fish sauce, 1 tbsp sugar and 3 tbsp water or broth (from pork/prawn). Stir continuously until the sauce is smooth and reaches your desired consistency.
